Ellie is out of the house and I have no idea when she'll be back. I emptied the dishwasher and cleaned out the fridge somewhat - rotisserie chicken from a week ago, old cold cuts, etc.

Fortunately, I checked the expiration date on the eggs. I saw JU and 28 and started gathering measuring cups. (It turns out to be JUL, by the way.)

I put two eggs aside for pancakes, though fortunately I reconsidered and halved the recipe. But I made the brownies first.

I have made brownies twice in the recent past - both times I, perhaps foolishly, assumed that the oven would have heated to the appropriate temperature by the time I was ready to put the brownies in (I sit around and snack on raw batter for a few moments) - and both times I was rewarded with underdone brownies.

Which I ate anyway, because they tasted fine. Just gooey.

This time, though, I had mommy advice. Let the oven heat up all the way. Set the timer and don't worry about it. So I turned on the oven, mixed up my brownies, and opened the oven to check the temperature.

I swear we have an oven thermometer, but I don't know where it went. It was not in the oven, though, which means I am worried about having fail!brownies again.

I moved on to the pancakes and had mixed them all up before I thought to call Mom again and ask how long it takes for an oven to reach proper temperature. After some minimally useful advice, I decided that it must be hot enough and put the brownies in.

Then I cooked the pancakes. I don't know what I did wrong - I just halved the recipe, I swear - but the batter was too thick. Oops. So I wound up with five very ugly little pancakes which had to be returned to the frying pan to cook all the way through. They were all horribly lopsided. Plus a sixth that was too burnt on one side to eat. I do not like burnt things.

I ate my five ugly pancakes anyway, and they tasted delicious.

As soon as I click post, I bet the timer will go off for the brownies. Hopefully not full of fail this time.

I don't know if you're looking for advice or not, but with pancake batter you can usually add a little more liquid to thin the batter out and they turn out fine. (I am a veteran cooker of pancakes on dorm stoves, which are not ideal, so I feel your burnt pancake pain)

I used to always have this problem with pancakes and Fairlight told me to put in extra milk (don't laugh, he's always right) and it worked. They need to be thin enough that bubbles go almost all the way through them. Just barely thicker than crepes.
