Much ado about cookies.

1 cup soy margarine or Earth Balance
1 1/2 cups dark brown sugar, packed
1/2 cup natural applesauce (no sugar added)
2 teaspoons baking powder
2 teaspoons pure vanilla extract
2 1/3 cup unbleached flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semi-sweet chocolate chips
1 egg or egg substitute
Preheat the oven to 375F.
Cream together: Earth Balance, sugar, applesauce, baking powder, egg and vanilla.
In a separate bowl, mix together the flour, baking soda and salt.
Add the flour mixture to the wet mixture and stir well to mix.
Stir in chocolate chips.
Drop by tablespoon onto a greased cookie sheet.
Bake for 10-11 minutes until golden brown.
